I really want to save a little money this year, try new recipes and avoid having lots of wasted food and products we throw away. I also want to be a little healthier. We don’t eat a lot of fish so when I found two in the freezer I thought I would use it for lunch with some rice. The trouble is fish and rice is very boring so I wanted to spice things up a bit. It’s amazing what adding some fresh herbs can do to rice and make it so much more tasty.
We just had two plain battered portions of Cod so we had it for lunch when Evie was at school. I then cooked quite a large portion of rice but I have an idea on how to use the extra so that’s fine. We cooked the cod in the oven and boiled the rice with seasoned water. Nothing very special really.
When the rice was cooked and drained of excess water I added chopped red onion, one chopped green chilli, a sprinkle of fresh coriander leaves and the juice of one lemon. I mixed all this through the rice before serving and I was really happy with the result. The fish was nicely cooked and the rice was tasty, spicy and zingy.
I also like a bit of sauce with my food so I mixed lemon juice and cracked black pepper through Mayo which complimented the fish and the spice in the rice really nicely. It makes an ideal light dinner or a quick and easy lunch. To make it even healthier you could use fish fillets and have a healthy grain like quinoa. For an alternative to the lemon mayo you could use fat free natural yoghurt.
