Baked Omelette and Orange Juice – A great Sunday Brunch

I think eggs are really versatile products and can be used to make some fantastic breakfast and brunches. Sunday’s are a bit of a mixed day for us at home as my partner returns to work for the week and my daughter is away alternative weekends so there’s a lot of waiting around and we never really have a big Sunday dinner like a roast so it’s great to be able to have a late morning brunch.

My favourite is baked omelette. I’m not very good at making omelettes in a pan so instead I bake them which a variety of flavours to create something lovely. A favourite of mine is a simple ham and cheese mix which is really versatile and can be adapted with healthier ingredients.



3 Medium Eggs
200 ml Semi Skimmed Milk or Milk Alternative (Soy etc)
A generous handful of cheese – I used a chedder and mozerella mix but feel free to use your favourite or a low fat alternative
A teaspoon of cream cheese – I used Boursin with garlic and herbs because I love the flavour but this also works really well with fat-free cottage cheese or a cream cheese alternative
Four slices of ham, cubed with the fat trimmed off – can also use bacon
Sprinkle of dry chives
Pinch of Paprika
1 Tsp of Lime & Cracked Pepper
1 Tsp of Southern Onion Spice Blend

Very simple and easy to do I just beat the eggs and milk together and added in the ingredients leaving some of the cheese to sprinkle on top. Added a pinch of paprika and chives before popping in the oven at 190 (fan oven) for 30 minutes. I was pretty happy with the result.

This mixture should be enough for two dishes like these. Fill half way up to allow room to grow.

To make the dish more filling or more suitable for lunch I think a peppery side salad would really add to it.
